Ayurvedic Gingerbread Cookies

Spiced with love.
To welcome the festive feeling, I've added some of my favourite spices to our Herbo-vit cookie recipe.
An easy to throw together, comforting treat that's likely to disappear within a few days!
What do I need?
1 tsp Cinnamon powder
1/4 tsp Clove powder
1/4 tsp Nutmeg
1/2 tsp Baking powder
1/4 tsp Baking soda
3 Tbsp milk
Sprinkle Herbo-vit on top
How do I get started?
- Preheat and prepare: Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper or lightly grease it with ghee.
- Mix dry ingredients: Sift the flour to remove lumps, then add a pinch of salt, baking powder, baking soda, and spices. Stir to combine.
- Combine Ghee and Herbo-vit: In a separate bowl, mix ½ cup of room-temperature ghee with ½ cup of Herbo-vit powder until well blended.
- Bring wet and dry together: Gradually add the dry mixture into the ghee and Herbo-vit blend. Mix gently until it forms a crumbly texture. If the dough feels too dry to hold together, add 2–3 tablespoons of milk, a little at a time, until it binds. Avoid kneading; just mix until a dough forms. Use less milk if using cookie cutters.
- Shape the biscuits: Roll small portions of dough into balls, or cut the dough into shapes with cookie cutters, placing them on the prepared baking tray with some space between each. For a decorative touch, gently flatten them with a fork and sprinkle a little Herbo-vit on top, or add some pistachio.
- Bake: Bake in the preheated oven for about 15 minutes or until the edges turn golden brown.
- Cool and Crisp: Remove the biscuits from the oven and let them cool on a wire rack. They will crisp up as they cool.
